Health Conscious Guru Diet Vegetable Chili
- 1 pound Ground Beef
- 1 tbsp. Olive Oil
- ½ of a Medium Size Onion, Diced
- ½ of a Green Bell Pepper, Diced
- ½ of a Carrot, Diced
- 1 tbsp. Garlic, Mincedc
- 3 tbsp. Red Chili Powder
- 1/2 tsp. Cumin
- 1 tsp. Salt
- 1 tsp. Pepper
- 1 can Fired Roasted Diced Tomatoes
- 1 can Tomato Sauce
- 1 can Chili Beans, Undrained
- ½ cup Mushrooms, Chopped
To make this recipe, start by placing olive oil in a non-stick pan over medium heat. Once olive oil is warmed, add beef, onion, bell pepper, carrots, and garlic. Continually break apart the beef during cooking with a spatula. Cook for 7-9 mins. (until the meat is browned and the vegetable is softened). Add spice, tomatoes, and tomato sauce. Bring this mixture to a boil, then reduce heat, cover, and keep on low heat for 60-75 mins. Stir frequently. Return the temperature to medium, add beans, and mushrooms, allow to cook for another 5 mins. Remove from heat and serve.
