Health Conscious Guru Diet Tomato Mint Salsa

  • 2 small Roma Tomatoes
  • 1 teaspoon Onion Powder
  • 1/2 teaspoon Garlic Powder
  • 1 clove of Garlic 
  • 1 bunch of Fresh Mint
  • 1 Lemon, Juiced
  • 1/8 teaspoon Simple Girl Sea Salt
  • 1/8 teaspoon Black Pepper

To make this diet recipe start by deciding what texture you want your salsa to be, chunky or smooth. If you want chunky salsa, mince the mint leaves and garlic. Top with the juice of 1 lemon. Add onion powder. Roughly chop the tomatoes (do not remove the seeds). Add everything together in a small bowl and mix. If you want smooth salsa, combine all ingredients into a blender or food processor and pulse until you reach your desired texture. This recipe is safe for VLCD Phase 2. This recipe counts as 1 vegetable serving, and all of your daily allotted lemon juice.
