Health Conscious Guru Diet Blackened Salmon with Mashed Potatoes and Side Salad

Salmon:

  • 4oz Boneless, Skinless Salmon Fillets
  • ¼ Tablespoon Paprika
  • ¼ Tablespoon Cayenne Pepper
  • ¼ Tablespoon Garlic Powder
  • ½ teaspoon Pepper
  • ½ teaspoon Sea Salt
  • 2 Tablespoons of Butter (separated)

Mashed Sweet Potatoes:

  • 1 Medium Sweet Potato
  • 1 teaspoon 2% Milk
  • Salt & Pepper

Preheat oven to 350 degrees. Add all of the above listed spices together in a small bowl. Melt the butter in a small micro-wave safe dish. Reserve half of the butter for cooking. Brush the butter onto the sides of the salmon. Rub the spice mixture on both sides of the salmon. Gently ‘press’ the spices onto the salmon to ensure that the spices stick during cooking. Place a non-stick pan over medium heat, pour the remaining butter into the pan, once warm, add salmon to the skillet. Cook for 3-5 mins. per side (may be more depending on the thickness of salmon). Remove salmon from pan, place salmon in a oven-safe dish, back for 6-5 mins., Remove from oven and serve.

To prepare the sweet potatoes, place a whole potato in the microwave until softened (about 5-6 minutes). Allow the sweet potato to cool. Remove the skin from the potato. Mash the potato with a wire whisk or masher. Add in milk, salt, and pepper. Continue to mash until it has reach the desired consistency.

This recipe is safe for the 2nd 3 weeks of Maintenance. DO NOT eat during the 1st 3 weeks of Maintenance.
